In order of preference.

1. Red
2. Grey
3. Black

I'm stuck on the decision as well. I've driven 2 NP A500's and an SS, all in red, and I love the colour apart from the red dash inside. I think I might just have to go with red then get a carbon dash from Daron!

Unfortunately, unless you get aftermarket carbon bits (and do make sure you are happy with the quality), you are stuck with body coloured dash. Personally, I love the red and it adds a splash of colour inside. Have you checked the abarth.cars.co.uk configurator for colours??
