Fairly simply.. it displays the pressure the turbo is providing, & it tells you when to change gear. Its set for economy on normal mode (flashes regularly 'change up') & stops you from trying to over rev in sport mode (I've never seen it flash 'change up'). Well at least that's how I understand it.

I have only ever seen it flash twice in sport mode on mine.
You can turn off the GSI up light in the menu of the car.

Where is the actual option to do this, I suspect it is only in the newer cars as I cannot find it for toffee on mine.

Can certainly do it in mine, first thing I did along with turning off the DRLs. Having said that, its not listed in the handbook as an option

When parked up, press the menu button and it is the very last option I think called GSI indicator. Press menu again to go into that option then up and down arrows to change it. Ill have a look in the manual at lunch and try and find what page it is on.

Yes In my defence I do have a very short traffic filled journey to work and I prefer the steering. I am conviced that doing most of my running in and driving fairly hard in normal mode has made my sport mode slightly more demented than normal. Or at least that's what I keep telling myself Well it is not in the manual, page 12 has the menu list but the item for the light is missing. Put it into menu mode press up arrow twice the select Normal/Sport or just Sport.

I think it was an amendment to the menu system for later cars, double, triple checked mine and it isn't there. Quite amazed there wasn't a software update done at service for the 'older' cars though

It's not on my car as well Weird. Wonder if they'll do any kind of update tomorrow at my 1st service.
